Để làm ếch xào sả ớt, bạn cần chuẩn bị những nguyên liệu sau:
- Đùi ếch: 500g
- Ớt: 2 trái
- Sả cây: 2 cây
- 1 thìa cà phê gừng băm
- 2 thìa cà phê tỏi băm
- Các gia vị dùng để nêm nếm gồm có hạt nêm, nước mắm, dầu ăn.
Trong cách chọn nguyên liệu, thịt ếch nên chọn ếch đồng sẽ có thịt chắc và ngọt hơn nhiều. Không nên mua thịt ếch nuôi, tuy to nhưng thịt lại có chứa nhiều nước và có vị rất nhạt. Những con ếch có thịt ngon sẽ có phần đầu thon, mắt sáng, có gân guốc, da bông vàng sang hoặc bông đen, phần bụng trắng hoặc ửng vàng.

Các bước làm ếch xào sả ớt.
2.1. Bước 1: Sơ chế thịt ếch.
Để đảm bảo cho hương vị của món ăn và tính an toàn vệ sinh thực phẩm, thịt ếch mua về cần được sơ chế sạch sẽ, kỹ càng. Cụ thể, bạn cần rửa thịt ếch với nước muối pha loãng hoặc gừng để loại bỏ hết những mùi tanh và độ nhớt ở thịt rồi rửa lại sạch với nước từ 2 đến 3 lần nữa rồi để ráo.
Sau khi thịt ếch đã được làm sạch loại bỏ mùi tanh và chất nhớt, để ráo thì cho thịt ếch vào tô lớn, ướp thịt ếch cùng với 1 thìa cà phê muối, 1 thìa cà phê bột ngọt, 1 thìa canh nước mắm, ½ thìa cà phê hạt tiêu, 1 thìa đường, hành băm, tỏi băm, ớt băm, trộn đều các nguyên liệu rồi ướp trong khoảng thời gian 30 phút cho thịt ngấm đều các gia vị.

2.2. Bước 2: Thắng nước đường.

Để thắng nước đường lên màu đẹp, đầu tiên bạn bắc chảo lên bếp, đợi chảo nóng thì cho vào 1 thìa canh dầu ăn. Khi dầu nóng thì cho vào 2 thìa canh đường để thắng làm nước màu. Khi đường bắt đầu tan ra hết và dần chuyển sang màu cánh gián thì tắt bếp.

2.3. Bước 3: Xào ếch.
Cho sả bào, sả băm, gừng và tỏi vào xào đều. Khi các nguyên liệu đã bắt đầu có độ vàng thơm thì bật bếp lên, điều chỉnh lửa lên mức to, cho ếch vào xào đều tay cho đến khi thịt ếch bắt đầu săn lại và ngả sang màu vàng ươm đẹp mắt thì nêm nếm lại với 1 thìa cà phê hạt nêm, 1 thìa canh nước mắm, 2 thìa canh nước lọc rồi tiếp tục xào trên bếp thêm khoảng thời gian 15 phút nữa thì cho ớt băm vào xào thêm 5 phút nữa rồi tắt bếp.

2.4. Yêu cầu thành phẩm.
Ếch xào sả ớt có cách làm khá đơn giản, chỉ cần một chút tỉ mỉ và áp dụng theo gợi ý trên là bạn đã có thể tự tay nấu món ăn cho bữa cơm gia đình mình.
